Is the celebration really over???

It has been an amazing June and I could be bias but it's my birthday month!!!! Yes, a month; I know I know...it seems like a lot but why not? Great things are meant to be celebrated so that's precisely what I've been doing.

I'm beyond grateful and blessed so coming back from my hiatus I wanted to make one of my favorite dishes which is my Spicy Vodka Pasta. It's quick, easy and super delicious. I'm not gonna lie I like to add a little protein to mine but you can totally devour this dish without any added protein.

I've placed the recipe below, give it a try and let me know what you paired it with. Cheers!!

Spicy Vodka Pasta

  • 2 tbsp. butter

  • 1/2 white onion or shallot, minced

  • 2 cloves garlic, minced

  • 1 cup tomato paste or crushed tomatoes

  • 1/2 tsp. crushed red pepper flakes

  • 2 tbsp. vodka

  • Kosher salt

  • 1 lb. tubed pasta, such as calamarata, penne or rigatoni

  • 1/2 cup heavy cream

  • 1/2 cup freshly grated Parmesan, plus more more for serving

  • Basil, plus more for serving

  • Protein such as shrimp, chicken or short rib (optional)

Grab a large skillet and over medium heat, melt butter. Add onions or shallots and garlic and cook, until softened, usually 4 to 5 minutes.

Add crushed tomatoes or tomato paste and red pepper flakes and cook, stirring frequently, until paste has coated shallots and garlic and is beginning to darken, this will take around 5 minutes.

Add vodka to pot and stir to incorporate, Turn down heat. Then add heavy whipping cream and stir.

Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve a little bit of pasta water before draining.

Return sauce to medium heat and add a bit of pasta water, stirring to combine. Add half the Parmesan and stir until melted. Turn off heat and stir in cooked pasta. Fold in remaining Parmesan, Season with salt if needed. Serve topped with more Parmesan and fresh basil leaves.
