Fried Salmon Poppers & Spicy Green Beans

Hey Family! Last night my tastebuds had a night to remember, I made some salmon poppers and spicy green beans with some sweet heat sauce for dipping. This was so good I had to share. If you're following me on socials I hope you got your ingredients together.

Salmon Poppers:

  • 1 egg

  • 1 pack wonton wrappers or phyllo crust

  • 2-3 salmon filets

  • Small bag of baby spinach

  • 1-2 bags of French cut fresh green beans

  • Green onion

  • Garlic

  • Old Bay

  • Cayenne pepper

  • Red pepper flakes

  • Paprika

  • Black pepper

  • Salt

  • Olive oil for coating

  • Canola oil for frying

  • Chili oil

Sauce:

  • Sweet chili

  • Soy

  • Sesame oil

  • And a little ginger

Directions:

Wash and prep your fish in about 1/2 inch or less slices so that they fit into the wrappers. You can really eyeball this part and most of the recipe, to be honest. Once you have your salmon sliced then add to bowl with a little olive oil and add your black pepper, old bay, cayenne pepper, papricka, red pepper flakes, and salt.

On your cutting board shred your spinach, and make a place to prep your wrappers. Take a small bowl and prepare your egg wash (one egg beaten with a splash of water), grab your brush and set aside. Next go ahead and flash steam your fresh green beans then drain and set aside.

Now back to the poppers, take your wrap and lightly brush edges with egg wash, then layer your spinach a little mozzarella or cheese of your choosing, add the salmon and then tuck and roll. Follow those steps until all your salmon is wrapped. Grab your skillet and add some canola oil and put on medium heat.

While that is on medium heat, grab another non stick skillet with a teaspoon of oil, then add minced garlic and chili oil or chili paste until fragrant (2 min) and then add your beans and toss.

Now it's time to drop your poppers, a couple of minutes on each side until a golden brown and place on drain rack to let excess grease run off.

For your sauce add some sweet chili, soy sauce, sesame oil and just a little bit of ginger. Mix and serve!
